Simple Summer Salad Recipe

My summer menu always includes an assortment of salads. There are not many healthy food options as refreshing as handmade salads (aside from frozen-banana ice cream, mmm), as far as I’m concerned. To keep things exciting, I challenge myself to try different ingredients.

In June, I shared an easy, four-ingredient salad dressing and today, I’m back with a simple, fruit-based recipe that includes only six ingredients. This salad is no-fuss, and ideal for a potluck or picnic menu.

I used approximately: 1/4 cup of cucumbers, 1/4 cup of blueberries, 1/4 cup of strawberries, 1 tablespoon of coconut oil, 1 tablespoon of cilantro, 1 teaspoon of lemon juice, and a drop of vanilla extract. When using these increments, the dish should serve one-two people.

*Coconut oil solidifies in certain temperatures; if you let the dish chill, don’t be creeped by the white chunks. Once the salad warms up, the oil will melt down.
